  1. Para armar los medallones basta simplemente con colocar en un bowl la carne picada y condimentar con sal y pimienta, luego vamos a armar bolitas del mismo tamaño y pasamos a darle forma entre dos separadores. Reservar en la heladera.
  2. Para las cebollas caramelizadas cortamos la cebolla en aros finos y dejamos dorar en una sartén con aceite, una vez que estén transparentes colocamos las dos cucharadas de azúcar hasta que comiencen a caramelizar, nos vamos a dar cuenta porque se van a tornar marroncitas.

Para la salsa de ají picante lo que yo hice fue quemar los ajíes directamente en la hornalla de la cocina, esto le da un sabor levemente ahumado, una vez fríos les retiré lo quemado muy bien y los corté en trozos pequeños, dejé algunas semillas para que sea más picante, pero si la quieren más suave pueden quitarlas. Luego añadí el aceite, el vinagre y el agua y mixee con la mini pimmer.
  4. En la plancha bien caliente vamos a dorar la panceta por ambos lados hasta que esté dorada y crocante, también vamos a colocar manteca y dorar ambas tapas del pan. Retiramos la panceta y los panes y procedemos a hacer las hamburguesas, (nosotros las cocinamos 4 minutos por lado, eso es depende el gusto de cada uno si les gusta "a punto" o bien cocida) Cuando damos vuelta la hamburguesa le colocamos 2 fetas de queso cheddar y la tapa de arriba del pan, y dejamos que el queso se derrita.
  5. Una vez cocida por ambos lados ya la emplatamos y la armamos a nuestro gusto. Yo le puse la cebolla caramelizada, salsa de ají, pepinillos, mostaza y ketchup
