- Orégano, pimentón dulce y/o ahumado

- La receta la hice para guardar por eso hice bastante cantidad. Con 1 lata de tomate, 1 puré chico y 250 g carne sería para 3 porciones. Primero rehogamos la carne en un poco de aceite y reservamos aparte.
- Picamos el ajo y el ají bien chicos. La idea es que no se note demasiado en la salsa. Rallamos la zanahoria y picamos la cebolla. Rehogamos primero bien el ajo y el ají.
- Agregamos la zanahoria y cocinamos revolviendo. La zanahoria desaparece, no la van a notar y le da cuerpo a la salsa.
- Agregamos la cebolla y a fuego medio cocinamos hasta que esté transparente. No debe quedar crudo porque luego es desagradable.
- Agregamos la carne picada ya cocida y condimentamos. A mí me gusta usar sal, un toque de pimienta, orégano, una cucharadita de pimentón ahumado y bastante pimentón dulce.
- Agregamos el tomate triturado y el puré. Cocinamos unos minutos y probamos. Seguramente va a estar ácido. Entonces agregamos una cucharada al ras de azúcar. Y rectificamos si hace falta más sal. El azúcar es importante en este punto. Dejamos cocinar a fuego bajo semi tapado revolviendo cada tanto. Cuando vemos que la salsa se redujo probamos la sazón por si hace falta algún condimento.
- Y ahora sí! Tomamos un pedacito de pan y hacemos lo que la Nonna no nos dejaba hacer! Jajaja
- Servir con la pasta cocida que prefieran. Y queso rallado. Yo guardé en el freezer una buena porción!
