- Ponemos en un bol la carne picada y la agregamos el jamón cortado a dados, 2 dientes de ajo muy picaditos el perejil picado, media cucharada de tomillo seco, sal al gusto y el huevo, lo mezclamos todo bien iremos formando las albóndigas,(si os cuesta formar las albóndigas podéis añadir un poco de pan rallado)
- En una cacerola con aceite vamos dorando las albóndigas, no tienen que cocinarse por dentro solo marcarlas
- En la misma cacerola añadimos el chorizo cortado en dados, y le incorporamos la cebolla cortada en dados, le añadimos los ajos laminados, el pimiento cortado en dados generosos, incorporamos los espárragos y dejamos rehogar un par de minutos
- Añadimos los fideos y los dejamos sofreír unos minutos, mientras tanto troceamos el tomate y lo ponemos en el vaso de la batidora trituramos y reservamos, añadimos el pimentón a la cazuela sin dejar que se queme, incorporamos el tomate lo dejamos al fuego todo unos minutos hasta que el tomate este frito
- Añadimos el caldo de carne y las albóndigas, dejamos hasta que eche a hervir una vez que arranca a hervir lo ponemos en el horno precalentado a 240 grados calor arriba y abajo hasta que se consuma el caldo(no es necesario hacerlo en el horno, yo utilicé el horno porque mi fuego es pequeño para un recipiente tan grande)
- Ponemos en el vaso de la batidora el diente de ajo pelado y leche añadimos un poco de aceite batimos con la batidora y le iremos agregando leche a la vez que vamos batiendo con la batidora hasta que coja la consistencia deseada, añadimos sal perejil una cucharadita de vinagre batimos un poco más, ya lo tendremos listo para emplatar!!
