- Lava la berenjena y pártela por la mitad a lo largo. Haz unos cortes en la pulpa sin llegar a atravesarla y métela al microondas unos 6 minutos a máxima potencia. El tiempo dependerá de cada microondas, la cuestión es que quede lo bastante tierna para vaciarla con una cuchara
- Mientras lava y corta los champiñones, sazónalos con sal y pimienta y desmiga las albóndigas (aunque enteras también habrían sido un puntazo).
- Saltea los champiñones y añade las albóndigas y la salsa de tomate. Remueve bien y cocina unos 5 minutos para que se integre todo bien
- Espera a que la berenjena se enfríe un poco y vacía la pulpa con la cuchara. Sazona y añádela a la mezcla zcla de carne y champiñones. Deja unos 5-6 minutos más.
- Rellena la berenjena con la mezcla y mientras el horno termina de calentarse, haz una bechamel con la mantequilla, la harina y la leche
- Cuando casi esté lista del todo añade sal, pimienta, nuez moscada y un puñado de queso rallado
- Napa la berenjena, cubre con queso y al horno. 10 minutos a 200C calor arriba y abajo
- Pasados los 10 minutos, gratina unos 5 minutos más y listo
