En el mismo aceite de la carne vamos a preparar un refrito poniendo una cucharada de achiote y colocamos la cebolla colorada, el tomate y el pimiento verde cortados en cubitos y una cucharada de pasta de ajo, revolver bien y cuando el refrito esté listo, volvemos a colocar la carne y adicionamos una media taza de agua y el cubo de caldo de costilla y dejamos cocinar bien la carne.
  3. Una vez que la carne está suave vamos a colocar el culantro finamente picado, dejamos por unos 3 minutos más y sacamos del fuego.
  4. Luego en un sartén aparte vamos a colocar el aceite en una olla pequeña o en un recipiente a fuego moderado y dejar que se caliente, luego vamos a poner el verde cortado en rodajas gruesas, dejamos dorar de ambos lados.
  5. Retirar cuando estén algo dorados y colocarlos sobre una base plana y aplastarlos usando un plato, una taza o una tabla hasta darles su forma.
    (Puede remojarlos en agua con sal antes de volver a freírlos si los desea extra crocantes)
    Vuelva a freírlos en el aceite caliente hasta que terminen de dorarse y se vuelvan crocantes.
    Espolvorear con sal al gusto (si no los remojó en agua salada)
  6. Servir con un huevo frito, un pan, una rebanada de queso y una taza de café pasado y buen provecho!!
