  1. En un recipiente ponemos la carne y todos los ingredientes, excepto la harina. La miga de pan remojada en la leche.
  2. Con un tenedor mezclamos bien.
  3. Con las manos vamos haciendo las bolas y las pasamos por harina.
  4. En abundante aceite de oliva freímos las albóndigas por todos lados. Reservamos.
  5. En el mismo aceite freímos la cebolla picada fina hasta que caramelice un poco, tiene que quedar doradita. A medio cocer la cebolla añadimos la zanahoria a rodajas no muy grandes. Cuando esté echa el tomate rallado y una vez frito vertemos un chorro generoso de coñac y luego el vino rancio.
  6. Después de unas vueltas para evaporar el alcohol añado el caldo. Vamos removiendo.
  7. Incorporamos las albóndigas
  8. Hacemos la picada: En un mortero picamos las avellanas, el ajo, el chocolate, el perejil y la canela. Una vez bien machacado añadimos un poquito de caldo para mezclar bien. La añadimos a la cazuela.
  9. Dejamos que esté unos diez o quince minutos cociendo suave y listo!
